In this process, named Chai Spice by the Primitivo team due to the cup profile that is achieved through targeted microbial inoculation, the coffee goes through two stages of fermentation—first in whole cherries for 48 hours. The excess cherry juice run-off (mossto) is also collected and set aside. Second, then after the outer skin is removed (pulped) and placed back into the anaerobic tank for another 48 hours.

The liquid left over from the first fermentation is reused in the second stage. This liquid is full of helpful microbes and nutrients that help guide the flavor development of the coffee.

The cherry is pulped but part of the mucilage — the sticky, sugar-rich layer under the skin — is left on the bean while it dries. How much is left, and how long it dries, is the producer's call, and it changes the cup.

Honey process sits between washed and natural: the clarity of one, some of the sweetness and body of the other.
