This lot is name Azafrán (Saffron) after her grandmother’s favorite cooking ingredient. It is a natural anaerobic caturra lot that is every bit as intense as Saffron — A little goes a long way! Juicy, winey, plum and grape notes abound from start to finish — a classic natural profile that is a real head turner.

The whole cherry dries with the fruit still on, turned by hand on raised beds for three to four weeks so that every bean dries at the same pace. The pulp ferments around the seed as it dries, and that is where the sweetness and the fruit come from.

A natural takes patience and a dry climate. Done well, it is the boldest expression of a coffee: heavy body, ripe fruit, a long finish.
